@sarah_federman You can sub out or leave out anything you can’t find pretty easily! I don’t use shrimp paste. I just chuck it all into a blender, cbf to use mortar and pestle

@sarah_federman This is just for the paste, for the curry - throw a couple of cubes in a pot, simmer for a bit to release the flavour, then add 1 can of coconut milk (coconut cream if you like it creamier) and stir through, add veggies and tofu, cook for a little bit, add another coconut milk

@sarah_federman Adding fish/oyster sauce is a good move (there are vegetarian options in woolies). Right before it’s ready, stir through Thai basil. If it’s too spicy, add brown sugar. For the red curry, stirring through a little soy sauce is good. just keep trying it & season to taste 😋
